U of I Extension offers diabetes cooking school

</element><element id="paragraph-1" type="body"><![CDATA[ If you have diabetes, choosing and preparing foods can be a real challenge. Learn how to cook foods that are low in sugar, fat and sodium at the Dining with Diabetes Cooking School sponsored by University of Illinois Extension.

"Those attending will learn how to cook with artificial sweeteners, lower-fat products, herbs and spices," explains Carol C. Schlitt, nutrition educator with U of I Extension. "The participants will plan and prepare a full meal - and then eat their creation."

"Everyone will get recipes to help them plan healthy meals at home," adds Julie Mumbower, the Randolph County Extension Director.

Dining with Diabetes Cooking School includes three sessions: April 12, 19 and 26 in the Family and Consumer Science food lab at Steeleville High School, 701 S. Sparta Street in Steeleville. All sessions will run from 5:30 to 7:30 p.m.
